Checked for Mac OS updates, none available.
Created a new profile, deleted the old one as per the instructions, still crashes!
No, it doesn't crash on opening Outlook or Word only when I compose or reply to an email, then almost immediately!
Word also does the same, open a document (existing) and then as soon as I save - it crashes!!!

Unless a fellow advisor comes up with a better alternative, I'd suggest to roll back to a previous and more stable version Rollback to Office 2016 for Mac 15.xx versions from 16.xx Revert from 16.xx builds to 15.xx 1. Confirm your version 2. Open any Office app, like Word. In the top menu, click Word > About Word. 3. In the dialog box that opens, you'll see a version number that either starts with '15' or '16.' Delete 16.xx Office apps If you are running a 16.xx build and wish to revert to 15.xx, follow these steps: 1.Quit out of all Office 2016 for Mac apps. 2.Go to Finder > Applications. 3.Scroll down and right-click + Move to Trash on the apps you wish to remove. For example, if you want to revert back on all the Office apps, delete them all. If you only want to revert back on Word, delete Word only. -Microsoft Word -Microsoft Excel -Microsoft PowerPoint -Microsoft OneNote -Microsoft Outlook - In order to revert back to a 15.xx version of Outlook, you'll also have to delete your Outlook profile. This will also delete your mailbox data stored on your computer. If you're an Office 365, Outlook.com or Exchange mailbox users, you'll be able to re-sync your data after setting up your Outlook profile again once the app has been reinstalled. Thank you for your update. And since the Mac OS has updated to the latest version, I suggest you check if the Outlook 2016 for Mac desktop client is the latest version. You can refer to Outlook for Mac update history and make a contrast. Besides, there’s an known issue that Outlook for Mac crashes after the Cisco WebEx Productivity Tools plug-in is installed. If you have installed it, please try to uninstall the plug-in or update to the latest version. Further, the add-ins are probably not supported the Outlook latest version. If you have installed other add-ins, please try to disable all of them in Store in the ribbon and check if the it works.

I highly recommend against uninstalling/reinstalling or reverting to an old version to fix this problem.
It sounds like you have the 16.14 update. Open Excel and go to the Excel menu and choose About Excel to find the version. You should have version 16.14.1 or 16.15, either of which will likely fix this this problem.
I think the first troubleshooting step to take is: Ensure your Mac and Office have the latest updates. Here’s how to install updates:
Make sure your Mac has a working internet connection, then:
Update Mac OS X. Open the App store and click on the Updates button. Install the updates.
After, in any Office application go to the Help menu and choose Check for Updates to launch the AutoUpdate app. Let AutoUpdate install updates and then restart your Mac.
If you use Antidote, Webex, Silverlight, EndNote, Zotero or other add-ins there is a potential for crashes unless you also update your add-ins to the latest update.
